  1. place meat, fat side up, on rack in a shallow roasting pan
  2. Season with your favorite steak/prime rib seasoning (Sometimes included in mail order beef packages).
  3. Rub evenly over the netted roast. Do not add water or cover
  4. Roast in a 375 degree oven until the meat thermometer reaches 135 degrees (approximately 1 to 1 ½ hours) for medium-rare or 145 degrees (approximately 1 ½ to 2 hours) for medium. Cover roast with aluminum foil tent and allow to stand 15 to 20 minutes. Remove netting and trim excess fat before carving.

How To Cook Filet Mignon:

This cut is so tender that it should never be cooked beyond medium-rare. The longer you cook it, the less tender and more dry it becomes. It is best to use dry, high heat such as grilling, roasting, pan-frying, or broiling. Cutting into the meat to check if it is done lets the juice escape. Instead of cutting touch the meat. If it feels soft and leaves an imprint, it is rare. If it is soft but slightly resilient, it is medium-rare. When it feels firm, it is overdone. Since filets are thick be sure to grill the sides as well as the top and bottom.

  1. Bring thawed steaks to room temperature
  2. Add your favorite seasoning to both sides
  3. Sear steaks directly over maximum heat. 1 minute on each side on a charcoal grill and 2 minutes on each side on a gas grill.
  4. Reduce to medium heat
  5. Move steaks to indirect heat and continue grilling
  6. Remove from the grill 5 minutes before desired doneness and wait 5-10 minutes before serving. This will allow the juices to be absorbed into the steak and raise the meat to the desired temperature.
